The grapes are harvested rigorously and entirely by hand when they reach optimal ripeness. A second selection then takes place in the winery. State-of-the-art equipment is used throughout the entire vinification process. The grapes are examined, and based on their character, it is determined whether they will be vinified in stainless steel, concrete, or oak.
