The grapes are fermented separately. This is done in stainless steel, except for the Roussanne, which is fermented and aged in oak barrels. Combes d'Arnevels Chateauneuf du Pape White is then aged for a while on the lees (sur lie). This makes the white wine much softer and more elegant. Only a small portion is aged in oak.
