History of Contadi Castaldi

The history of Contadi Castaldi is a story of renewal and change, rooted in the Franciacorta region. What was once an old brickworks is now a thriving winery thanks to the vision of Vittorio and Mariella Moretti. They saw the potential to transform these historic buildings into winemaking and aging spaces. The characteristic architecture of the Fornace Biasca now forms the heart of the production of world-class sparkling wines. After a gentle pressing of the grapes and a cold static decantation, alcoholic fermentation begins in stainless steel tanks with specially selected yeasts. This is followed by partial malolactic fermentation. The wine then matures for seven months, partly in stainless steel tanks and partly in oak barrels. The wine is then bottled for a second fermentation on the fine lees, where it remains for between 30 and 36 months. Finally, the sparkling wine is aged in bottle for another three to four months.
