A very impressive Chardonnay from Limoux. The region is known for its elegant sparkling wines, but this "still" Chardonnay is just as refined. The vines are twelve to eighteen years old and are planted in soils of clay, slate, and gravel. The vineyard faces south on the hills of Limoux.
Only the best quality for Astruc wines
The Chardonnay grapes come from various vineyards around Limoux in the Languedoc region, which belong to the Domaine Astruc. Only the finest juice is good enough to bear the Astruc label. Therefore, the grapes are rigorously inspected after harvest. This white wine is made entirely of Chardonnay. The climate in these vineyards is Mediterranean, but also influenced by the Atlantic Ocean. The soil is calcareous with a sandy texture and is highly siliceous. The grapes are harvested partly manually and partly mechanically at night to prevent oxidation.
After this, the grapes are cooled and pressed, avoiding contact with the skins as much as possible. The juice is then fermented at 18 degrees Celsius in stainless steel tanks for 24 days. Fifteen percent of the wine undergoes malolactic fermentation. This softens the acidity and rounds out the wine. A third of the wine is aged in French and American oak barrels for five months.

The nose is powerful with hints of tropical fruit, dried grapes, and a hint of nuttiness. This wine has good structure, and we taste plenty of tropical fruit again, along with notes of vanilla on the finish. This Chardonnay makes an excellent aperitif and pairs well with fish and shellfish. Moreover, this white wine won a gold medal at the prestigious Concours Générale Agricole de Paris.
