The ideal location for Domaine Astruc
Domaines Paul Mas was founded in 1892. The current owner, Jean-Claude Mas, is undoubtedly the pioneer in the Languedoc's revival as a region for quality wines. He characterizes his wines as "Le Ruxe Rural," meaning rural luxury. Domaine Astruc was acquired by Jean-Claude Mas in 2002 and has since become an established name among wine lovers. He runs the winery with respectful gratitude. Nestled at the foot of the Pyrenees, Domaine Astruc comprises over fifty hectares, 25 of which are planted in the Limoux appellation. This is a unique terroir, as many climatic influences converge here. On the hillsides of the Aude Valley, Chardonnay reigns supreme, but red grape varieties are also important: Pinot Noir, Cabernet Sauvignon, Cabernet Franc, Merlot, and Malbec.
The vineyards are situated at a relatively high altitude and remain in excellent health thanks to their proximity to the sea. This eliminates the need for chemical intervention, and the sea breezes keep the vineyard in peak condition. The grapes are hand-picked at peak ripeness. They are then lightly pressed and subjected to slow, low-temperature fermentation in oak barrels with partial malolactic fermentation (60 percent). Finally, this Limoux Chardonnay matures for nine months in French and American oak barrels, a third of which are new.

This white wine has a light color with a shimmering golden hue. The nose is intense and complex, with buttery and tropical flavors. The wine is full-bodied with pleasant elegance and remarkable balance. The ideal drinking temperature is between 10 and 12 degrees Celsius. The Astruc Chardonnay pairs perfectly with a shellfish risotto or veal sweetbreads. After a little aging, it will pair perfectly with creamy mushroom soup, roasted chicken with truffle purée, or sole meunière.
