Wood aging for the Dark Horse Cabernet
When the Cabernet Sauvignon grapes reach their peak ripeness in the vineyard, they are harvested by hand. Each bunch is inspected to determine its suitability for this beautiful red Dark Horse. The juice that flows from the press is superb and already priceless. This beautiful juice is then aged for several months in oak barrels in the Dark Horse cellars. During this crucial period, the red wine develops its flavor, and the oak barrels give it its distinctive character.
