The vineyards of De Bortoli
De Bortoli Wines is a three-generation family business founded in 1928 by Vittorio and Giuseppina De Bortoli, who emigrated from Italy and eventually settled in Bilbul, New South Wales. De Bortoli Wines is situated in a beautiful setting just an hour's drive from Melbourne. The Yarra Valley Estate is currently managed by a third-generation family member, Leanne De Bortoli, and her husband, Stephen Webber, who is also the principal winemaker. The De Bortoli family purchased the Yarra Valley Estate in 1987 in their quest to produce premium wines from a renowned cool-climate region. The original vineyard was planted in 1971, making it one of the oldest vineyards in the Yarra Valley. Since then, other vineyards have been added to the main farm, which now comprises 240 hectares.
The Shiraz grapes are harvested early in the morning to preserve the varietal's fruity character. The grapes are pressed immediately to achieve just a hint of color. The juice is then fermented in tank for the next two to three weeks.
