Wood aging for this Reserve line from Delbeaux
When the grapes reach their perfect ripeness—which is earlier for Chardonnay than for Viognier—the harvest is about to begin. In the middle of the night, while the grapes are still recovering from the previous warm day, the winemaker signals the start of the harvest. Because this harvest takes place very early in the morning, the grape skins are firmer and the juice much fresher. The harvest is complete, carried out manually, after which all the bunches are transported smoothly in small crates to the press. The pressing is carried out gently, ensuring only the finest juice is used in the wine. Some of the wine is set aside for aging in French oak barrels for greater depth and suppleness. The rest is further aged in stainless steel tanks to preserve the wine's beautiful freshness.
The aroma and taste of the Delbeaux Chardonnay Viognier
We're now quite interested in tasting this white wine in depth. Pouring it reveals a beautiful light gold color with a deep golden rim. The aroma reveals hints of honeysuckle, acacia, and citrus, balanced by some yellow fruit and a light touch of vanilla. The palate is soft, rounded, and broad. Pleasant nuances of apricot, peach, and plum interspersed with vanilla, yellow cream, nuts, and a slightly toasty note. The finish showcases the best of both grape varieties! A harmonious balance between mild, creamy, and fresh that, in our opinion, could linger indefinitely.
