The smooth wines of Domaine de Castelnau
Wine has been produced at the Domaine de Castelnau since Roman times. Today, this is done in a very modern way, with Beatrice and Christophe Muret at the helm. They harvest their grapes at full ripeness and produce fresh and supple wines. They own approximately 100 hectares near Pezenas. They are technically very strong, and thanks to their sophisticated production method, known as lutte raisonée, they produce honest and concentrated wines. The wines from Domaine de Castelnau are often relatively fresher, leaner, and more elegant.
The vineyard extends over one hundred hectares in the south of Pézenas. When the grapes are fully ripe, they are harvested very early. This allows the weather to remain cold, allowing the grapes to retain their freshness until they arrive at the winery. Sauvignon Blanc grapes quickly release their aromas. At the winery, they are immediately crushed and pressed. Fermentation then takes place in stainless steel tanks at a controlled temperature. After this, the wine is aged on the fine yeast spores.

The Sauvignon Blanc Le Bosquet emerges with a pale yellow color. The nose is expressive and complex, with aromas of pineapple, lime, and passion fruit. The palate is elegant, with a distinct tropical fruit presence. Wonderfully dry and refreshing with soft acidity. This light and lively wine is ideal as an aperitif and also pairs beautifully with seafood and fish dishes.
