Château de Selle is the flagship of Domaines Ott, situated on sun-drenched limestone hills in the heart of Provence. This rosé, made from organically grown grapes, is a textbook example of refinement, balance, and terroir expression. An iconic wine that captures the essence of southern France in every detail.
Vineyards and region – sun, stones and cool nights
The 84 hectares of vineyards are situated on dry soils composed of red clay, gypsum, gravel, and stones, with a rock content of 40 to 50 percent. The location, nestled among pine trees and forests, creates a unique microclimate with abundant sunshine during the day and cool nights. Thanks to these conditions, the grapes ripen slowly and evenly, resulting in freshness, aromatic depth, and ageing potential.
Vinification and maturation – tradition and precision at the highest level
The grapes are harvested by hand, gently pressed, and vinified separately. Fermentation takes place at a low temperature in stainless steel tanks. After blending, the wine is briefly aged on the fine lees to enhance its structure and elegance without overpowering the fruit. Château de Selle follows a biodynamic approach and received its first official organic certification in the 2022 vintage.

Tasting notes
Pale pink with a bright, sandy sheen. The nose is complex and elegant, with aromas of white peach and a floral undertone. The palate is fresh and mineral, with notes of citrus and summer fruit, and a salty finish that lingers elegantly.
Serving suggestions
Excellent with langoustine, ceviche, or a Provençal salad. Serve at 10 to 12 degrees Celsius for maximum flavor.
