The Savagnin grapes are grown on the rolling hills of Montigny-les-Asures. The soil here is primarily marl, which creates beautiful aromas. This typical Jura wine offers a wide palette of aromas, with both sweet and acidic notes. A lovely fruity wine that is especially refreshing.
 The family business Rolet
The Domaine Rolet winery was founded in 1942 by Desire Rolet. In 1958, his four children took over the management. Over the years, the winery has acquired excellent old vines. They now own approximately 65 hectares of vineyards. The family cultivates the vineyards sustainably and harvests entirely by hand. This is quite a challenge, given the steep slopes of the vineyards. Thanks to its distinctive style, which combines classic know-how and excellent technical mastery, Rolet et Fils has become an essential reference in Jura wines!

The grapes are harvested entirely by hand. After harvesting, they are taken almost immediately to the winery, where a rigorous selection process takes place. The grapes are gently pressed, and alcoholic and malolactic fermentation takes place in barrels. Finally, the wine is aged for another nine months in old oak barrels. To prevent the wine from oxidizing, the barrels are filled, or "topped up," with wine to replace the liquid lost during evaporation. This process is called "ouillé" in the Jura region. A unique technique for a unique wine.
The many aromas of Domaine Rolet Arbois Savagnin Ouillé

First, a delightful aroma stands out, alternating white flowers, citrus fruits, and white stone fruit. This is complemented by a subtle honey note. Refreshing on the palate with hints of lemon, pear, orange, peach, grapefruit, and pineapple. Thanks to the oak aging, the wine also develops some fuller flavors. But freshness prevails. Complex and elegant. A beautiful example of what the Jura region has to offer.
