In recent years, significant investments have been made in the vineyards and modern winemaking techniques, among other things. But what makes Domaine Valinière so renowned is its pioneering spirit. After all, who makes an Appasimento wine in France but winemaker Nicolas Vellas?

For this superb red wine, Syrah and Mourvedre grapes are grown in the heart of the Languedoc-Roussillon region. Here, Domaine Valinière's old vines grow, which nowadays yield only a small harvest. The grapes thrive in the chalky soil and are planted on the best slopes in St. Drézéry. The climate here is perfect, with abundant sunshine and a cool breeze contributing to the success story. When the grapes are ripe, the branches of the vines supporting the bunches are cut. The bunches are deprived of nutrients, and the sun gently dries them. This drying process is called the Appasimento technique, a method often used in Italy but rarely in France. After several weeks, the bunches are gathered and pressed. The resulting juice is truly phenomenal.

The moment we poured it, we were already sold. What a beautiful deep red color, almost black! The most beautiful aromas emerge from the glass, giving us impressions of ripe black fruit, plums, dark chocolate, vanilla, and a hint of currant. On the palate, it offers a very smooth sensation, with plenty of richness of black fruit, with cherries and berries taking center stage. On the back of the tongue, there are nuances of vanilla, gingerbread, and a touch of spice. What a joy to drink this red wine called Domaine Valinière Appasimento.
