Domini Veneti was founded in 1989 by Cantina Valpolicella Negrar, a historic winery located in Verona and founded in 1933. The company embarked on an ambitious project to enhance the quality of Valpolicella Classica through the selection of specific areas. This led to the launch of the Domini Veneti line, known for its excellence in producing both Valpolicella Classica DOCG and DOC wines, as well as other high-quality Veronese wines. Domini Veneti is a brand that stands for authenticity and refinement, reflecting the most honest expression of a specific area, geographically and historically.
The Domini Veneti Pruviniano Amarone vinification process is carefully planned to ensure the highest quality grapes. It begins with the harvest, which takes place between September and October. Only the finest, hand-picked grapes are selected for further processing. After this, the grapes are dried in the drying room until December or January. In February, the grapes are crushed and destemmed. Fermentation takes place at a temperature of 12 to 23 degrees Celsius, with maceration (the decomposition of the grapes) taking place during fermentation for 30 days. The juice is cold-processed for 12 days and pumped manually three times a day. Malolactic fermentation takes place entirely to enhance the flavor. Finally, the wine is aged in wooden barrels and then bottled.
