This exceptional Don PX 1958 has garnered international acclaim and has already won numerous awards. Made from 100 percent dried Pedro Ximenez grapes, the grape variety Toro Albala specializes in, it is the result of a centuries-old tradition: storing at least one barrel of wine made in special years. This wine is aged for extended periods and bottled at precisely the right moment.
Successful Toro Albala wines
The Toro Albala family business has a long history, beginning in 1922 with a small-scale winemaker named Jose Maria Toro Albala. Their wines are found in restaurants worldwide, but in the early years, their success was highly doubtful. Toro Albala began producing wines for long-term aging, intending to create more elegant wines. At the time, however, this was a significant risk due to the economic crisis. But courage and passion brought this bold idea to great success. They now specialize in the Pedro Ximenex grape variety.
To ensure the grapes develop their sweetness, the Pedro Ximenez grapes are sun-dried into raisins. This allows the grapes to acquire their rich sugar content. The grapes are then pressed in the winery and aged for a long time.
The smell and taste of Don PX Convento Seleccion 1958
Then it's time to enjoy this Sherry wine. The color is dark, almost black, with beautiful reflections in the glass. The aroma is intense, with notes of orange, balsamic vinegar, raisins, plums, and dried apricots. A delightfully sweet taste, complemented by a light acidity, ultimately leading to a pleasant bitterness and a refreshing finish. A delicious sweet wine perfect for enjoying on its own. But it also pairs beautifully with game dishes or chocolate desserts.
