Long winemaking process for Don PX 1980
This Sherry is marketed by the centuries-old Toro Albala winery. A unique winery, founded in 1922, its roots trace back to the 19th century. The core of the winery is located in a former power station in the heart of Montilla-Moriles. The wines are exported worldwide to 27 different countries. Approximately 30 percent of the grapes come from their own vineyards, with the remaining 70 percent coming from partner growers. The cellar, with approximately 6,000 barrels, is located in the underground tunnels. They are experts in the Pedro Ximenex grape, which also plays a key role in the wine.
To ensure the grapes develop their sweetness, the Pedro Ximenez grapes are sun-dried into raisins. This allows the grapes to develop their rich sugar content. The grapes are then pressed in the winery and left to rest for twelve months. This is followed by aging in American oak barrels for over 20 years.
A balanced wine with a bitter aftertaste
The wine darkens in color as it dries, and this color only deepens as it ages in the barrel. This Don PX 1980 is dark brown. We immediately enjoy aromas of plums, dates, and dried grapes. These aromas are complemented by the scent of sweet spices like cinnamon and notes of sweet biscuits. The palate is balanced, with sweet, sour, and a slightly bitter finish.
