Doppio Passo deliberately chose Sicily for their white wine, the sun-drenched island known as the "land of the sun." In this unique climate, with warm summers and cooling coastal breezes, they found the ideal vineyards for a Grillo full of freshness and sunny expression. The result is a vibrant Sicilian that delivers exactly what you'd expect from this grape.
Vineyards and region
The grapes come from select vineyards within the Sicilia DOC. The Mediterranean climate along the coast, combined with limestone and sandy soils, ensures optimal ripening while retaining fresh acidity. These conditions give the wine its characteristic balance of fruit, floral expression, and vibrant freshness.
Vinification and maturation
After a gentle pressing, the juice undergoes temperature-controlled fermentation in stainless steel tanks at 17-18°C for 15 to 20 days. The wine then rests for a period of time in steel tanks at 18-20°C until bottling. This maximizes the pure fruit flavor of Grillo, without the influence of oak.
