This Dr. Bürklin-Wolf Riesling Forst Village Trocken BIO 2023 comes from the historic, top-tier Dr. Bürklin-Wolf estate, renowned for generations in the Palatinate for its powerful yet refined Rieslings. The Village Forst is vinified as a serious village wine, with a clear character of origin and using fully organic methods. What makes this Riesling Forst so compelling? It combines the richness of the Palatinate with the finesse of a Forst village wine, made according to organic and biodynamic principles.
Vineyards and region
The grapes come from Germany, from the Palatinate, from several plots around the village of Forst in the Mittelhaardt region. For this cuvée, Dr. Bürklin-Wolf primarily uses younger vines from its own top vineyards, including plots classified as Grand Cru vineyards such as Jesuitengarten and Pechstein. The soils consist of layers of clay, loam, and sandstone, which gives the Riesling both strength and tension. The vineyard is managed entirely organically and biodynamically, ensuring that the purest expression of Forst and Mittelhaardt grapes reaches the glass.
Vinification and maturation
Harvesting is done by hand, with the grapes being gently pressed as whole bunches. The juice ferments spontaneously with the grape's own yeasts, without the addition of selected yeast cultures. The wine is then aged in large, used oak barrels, where it rests on its lees for an extended period; this aging on the fine yeast, sur lie, adds complexity and a light creaminess without sacrificing freshness. The result is a dry Riesling with 12% alcohol, beautifully balancing the power of the Pfalz with a mineral, precise structure.

The wine is 100% Riesling from various Forster plots, with younger vines in Jesuitengarten and Pechstein, among others, which provides ripe yellow fruit, clear freshness and a distinct character of origin.
Tasting notes and serving suggestions
In the glass, this is a pale yellow Riesling. The nose reveals ripe fruit aromas such as mango, apple, pear, and melon, supported by striking smoky notes and a hint of flint. The palate is dry and fresh, beautifully balanced with a lovely balance of ripe fruit, crisp acidity, and fullness, with an elegant, mineral structure and a long finish. Serve this Riesling at 8 to 10°C; it pairs particularly well with scallops and bacon, where its combination of pure fruit, smoky notes, and freshness beautifully elevates the dish.
