Eugenio Collavini Il Grigio Spumante Brut is a stylish sparkling wine from Friuli, made using the Martinotti method with a remarkably long aging on the lees. Produced since 1973, this wine is considered a classic in the Collavini range. Il Grigio is known for its finesse and subtle aromatic character, making it perfect as an elegant aperitif.
Vineyards and region
The grapes come from both the hills and plains of Friuli, an area known for its crisp white wines and delicate sparkling styles. Thanks to the temperate climate and marl and limestone soils, the grapes develop natural acidity and aromatic purity. The vines are planted according to the Guyot and spurred cordon system, with a density of 4,400 to 4,800 vines per hectare.
Vinification and maturation
After a gentle pressing, fermentation takes place without skin contact. A secondary fermentation follows in the spring at 14°C in vertical pressure tanks, after which the wine is aged on the fine yeast residues for five to six months. This extended autolysis provides extra structure, elegance, and a fine mousse, characteristic of high-quality Spumante made according to the Martinotti method.

Tasting notes and serving suggestions
Il Grigio has a pale, bright color with green highlights and a fine, persistent mousse. The nose reveals aromas of Golden Delicious apples, pear, and freshly baked bread. The palate is round, subtly aromatic, and rounded out by a hint of citrus and a remarkably long finish. Serve at 8°C (46°F) with fish dishes, charcuterie, vegetable soup, or oven-baked fish.
