This is unique in Italy, where previously only indigenous grape varieties were used. Meet Guilio Ferrari had a clear vision and wanted to work specifically with Chardonnay, as it is the king grape of the Champagne region. The grapes are carefully harvested at peak ripeness and rigorously sorted in the winery. The Ferrari Maximum undergoes a second fermentation in the bottle, known as the Méthode Traditionelle.
