The vines are deeply rooted in soils of kimmeridgian, clay, limestone, and fossilized shells, giving them a unique character.
Characteristic Chardonnays from Fevre
The Fèvre family has been active in the Chablis region since the early 19th century, making it the region's most recognizable name. Nathalie and Gilles Fevre's vineyards are located near the village of Fontenay-Pres-Chablis, totaling over 100 hectares under vine. This results in distinctive and flawless Chardonnays, which has contributed to the winery's exceptional reputation. Gilles focuses primarily on working in the vineyards, while Nathalie is primarily found in the cellar. Fevre's vineyards are found on high plateaus and steep slopes.
The grapes are carefully harvested at peak ripeness, with meticulous attention paid to the quality of each grape. They are then transported to the winery, where another rigorous selection process takes place. After pressing, fermentation takes place at a controlled temperature in stainless steel tanks. The wine is then aged on lees for 12 months, 15 percent of which is spent in oak barrels and the remainder in stainless steel tanks. This softens the wine and adds some complexity.
