A sparkling wine from Israel? Yes, indeed. Winemaker Victor Schoenfeld, with a great deal of love, has created a sparkling wine from Chardonnay and Pinot Noir grapes. These two grapes are also renowned in the Champagne region of France, so Victor Schoenfeld quickly decided. This Gamla sparkling wine must also be made from these two grapes. He decided to plant a unique vineyard in northern Israel. At an altitude of 1200 meters, the Chardonnay and Pinot Noir vineyards for this Gamla "Champagne" are located. With deep roots in the volcanic soil, the grapes develop their own identity, resulting in a unique flavor.
Gamla Nature Brut is made according to the traditionelle method
Once the Chardonnay and Pinto Noir grapes have reached full ripeness, they are harvested separately. Hand-harvesting begins early in the morning to protect the grapes during transport and preserve their freshness. Only the purest juice is good enough for this Gamla Nature Brut, and that's clearly reflected in the ripe flavor. But before that happens, winemaker Victor Schoenfeld creates the blend. A difficult task, but leave it to him, as he has a wealth of experience. The entire wine is aged with yeast and sugar in the bottle for at least twelve months in the cellars of Golan Heights Winery. During this period, he builds the bubbles, similar to those of French Champagne. This makes the bubbles very soft and refined.
The aroma and taste of the Gamla Nature Brut
The bottle is topped with a Champagne stopper and pops from the bottle. Upon pouring, we immediately encounter a beautiful, soft mousse (bubbles) with a lively bouquet of orange, green apple, a hint of freshly baked toast, and spices. On the palate, this wine takes you to a high point, with beautiful ripe flavors of yellow fruit on the tongue and a touch of citrus. Later, on the throat and finish, this Gamla Nature Brut also reveals nuances of toasted bread, vanilla, and a touch of lime peel. What more can we say? It's simply a joy to drink.
