Graffetta Grillo originates from the Segesta region of Sicily, Italy. The Segesta region is known for its favorable conditions for growing white grape varieties such as Grillo. Through cooperative vineyard management agreements, they have gained access to vineyards located at an altitude of approximately 600 meters above sea level. The vineyards in the Segesta region are hilly and have skeletal soils, meaning they contain a high proportion of rocky elements. This soil composition provides excellent drainage and helps create a healthy and well-drained subsoil for the vines.
The grapes are carefully harvested by hand to ensure that only the finest and ripest grapes are selected. After harvesting, the grapes are taken to the winery and gently pressed to extract the juice. Fermentation then begins at a controlled temperature of around 18 degrees Celsius and lasts approximately 10 to 12 days. After alcoholic fermentation, malolactic fermentation takes place in steel tanks. The Graffetta Grillo wine is then aged in steel tanks to preserve the natural expression of the grapes and maintain its freshness. Here, the wine is given time to stabilize and develop its harmony before bottling.
