Besides producing red Appassimento wines, a growing number of wineries are also producing white Appassimento wines. Cielo Winery, however, was one of the first to do so, and not entirely without success. Cielo e Terra was founded in 1908 by a group of winemakers with similar interests. Their sole goal was to produce good wines at a fair price. Cielo has certainly proven that. With this new Gran Maestro series, they are once again producing top-notch wines at a perfect price!
White Appassimento wine
The Gran Maestro Bianco Puglia Appassimento is made from 80% Chardonnay and 20% Fiano. This white wine is also made using the Appassimento technique, a technique also used in Amarone wines. It involves allowing the grapes to dry before pressing. Before manual harvesting, the winemaker cuts the branches on which the grapes hang. This deprives the grapes of nutrients, allowing them to dry under the sun's rays. This technique, called Appassimento, is widely used in Puglia wines. This extensive work in the Cielo vineyards gives this Gran Maestro white wine a fuller, more powerful flavor. After the grapes are pressed and vinified, the wine is aged in the bottle for four months in the Gran Maestro cellars for optimal results.
The taste of Gran Maestro Bianco
This optimal result has now been achieved thanks to all the effort in the vineyards and the winery. The deep straw-yellow color already suggests a lot, and the aroma confirms it. A full, powerful aroma with nuances of tropical fruit, delicate apricots, and a touch of vanilla. The palate is soft and rounded with many powerful flavors of peach, mango, pineapple, and a subtle hint of vanilla at the end. The finish is long, and for this price point, an exceptionally beautiful glass of white wine from Puglia!
