The Unique Terroir of Maipo Valley
Ventisquero's vineyard in Maipo Valley is truly unique. The soil has five distinct layers, ranging from clay to coarse, stony sand and even granite. This diversity contributes to the complexity of the grapes.
Harvest takes place in April, and only the most ripe grapes are selected. This selection is done by hand, with the grapes placed in 12-kilogram bins. After careful selection, the grapes are naturally transferred to tanks. Only half of the grapes are crushed, followed by a five-day pre-fermentative maceration. The fermentation process is closely monitored, with the wine being tasted daily. After 32 days in tanks, the wine is aged for 18 months in French oak barrels, followed by another eight months of bottle aging.
