The Domaine de Guillaman family estate is located in the Cotes de Gascogne, a region near Bordeaux. Today, the sixth generation is at the helm and manages over 26 hectares. Originally known for the production of Armagnac, the estate transitioned to high-quality table wines. This also marked the beginning of the extensive replanting of vineyards and the renovation of the winery. This wine region has had an official classification since 1982, and its wines have become increasingly popular in recent years. While the majority of the grapes planted are Ugni Blanc, Sauvignon Blanc, and Colombard, varietals traditionally found in the Côtes de Gascogne, Domaine de Guillaman has also chosen to cultivate this distinctive Chardonnay grape, which adds a distinctive aroma. The grapes are carefully harvested at peak ripeness.

Only the very best is good enough, so the grapes undergo a rigorous selection process. At the winery, the grapes are gently pressed and fermented at cool temperatures.
