The Jordan Winery Wine Adventure
In 1992, Kathy and Gary Jordan took over the wine estate purchased by Gary's parents. They had both already gained considerable winemaking experience abroad, and now it was time for their own wine adventure. Gary has been involved with his parents' wine estate from the very beginning. He was involved in the complete planting of all the grape varieties. He used his knowledge to analyze the terroir and ensured that each grape variety was planted in its ideal location. He continues to benefit from this to this day. The vineyards have now matured and achieved incredible complexity. It is a true family business where quality is paramount.
The Riesling grapes are harvested only once they have reached a perfect balance of sugar and acidity. They are carefully picked in the early morning to preserve their freshness. At the winery, they are pressed almost immediately in a pneumatic press. The juice settles in the tank for two days, after which the clear juice is separated from the lees. Cold fermentation follows at 15 degrees Celsius in stainless steel tanks. The wine is allowed to rest for a while before being bottled.
