The centuries-old Girardin winery

The Girardin family has lived in Burgundy since 1570. Vincent and Jacque's father, Jean Girardin, divided his estate among each of his four children in 1982. Three of them, Yves, Vincent, and Jacques, continue the family tradition of farming and winemaking. Jacques acquired only 3 hectares of vines in Santenay and Savigny-les-Beaune, and today the holdings extend to Pommard and Chassagne-Montrachet, with a total of 17 hectares farmed organically. Jacques transferred the estate to Justin in 2012, leaving the family business in good hands. Justin's philosophy is simple: allow nature to express itself as much as possible in the vineyard and ultimately in the wine, while also safeguarding and respecting the land.

Hand harvest for Justin Girardin Bourgogne Chardonnay

The Chardonnay grapes come from vineyards in the Santenay appellation. The vines here are approximately 25 years old, and the grapes are harvested entirely by hand. The grapes are transported directly to the winery and pressed immediately. Fermentation then takes place in stainless steel tanks at a low, controlled temperature. Only natural yeasts from the surrounding area are used for this process. Finally, the wine is aged for 12 months, 50% in French oak barrels and 50% in stainless steel vats. The wine is aged on its own yeast cells to add extra creaminess and complexity to the final wine. The Bourgogne Chardonnay shines with a pale yellow color in the glass. The aroma is pleasantly fruity with notes of peach, white flowers, and apple. The taste is pure, elegant, and mineral. Fruity and round on the palate.
