6 months of wood aging for Kaiken Estate Cabernet Sauvignon

One of Chile's most famous winemakers, Aurelio Montes, decided to establish Kaiken Estate in 2002. The name refers to a species of goose native to Patagonia, which annually migrates across the Andes Mountains from Chile to Argentina. The Cabernet Sauvignon grapes are planted in Agrelo, Lujan de Cuyo. These vineyards are located at an altitude of 950 meters, 40 kilometers south of Mendoza. The climate is dry and quite windy, with cold winters and warm summers. The temperature variations are considerable, but this allows the grapes to ripen well. The soil consists of silty loam, which allows for excellent vineyard development. The grapes are harvested entirely by hand and taken directly to the winery. Here, a rigorous selection process follows. The resulting juice is fermented in small tanks, allowing the fermentation process to take place under optimal conditions. Alcoholic fermentation then follows. Finally, forty percent of the wine is aged for six months in French oak barrels, while the remainder is not aged in wood. This is done to emphasize the fruit flavors and aromas while preserving the soft tannins.

This Cabernet Sauvignon has a deep ruby ​​red color and a distinct aroma of red berry fruit. This aroma is complemented by aromas of eucalyptus and menthol. The taste is typical of a Cabernet Sauvignon. Wonderfully soft, rounded with fine tannins and notes of dark fruit, chocolate, and vanilla, thanks to the oak aging.
