Various vineyards for Kaiken Ultra Malbec
At an altitude of 250 meters above sea level, we find the Los Chacayes vineyard, where the Malbec grapes are grown. The climate is temperate, with harsh winters and warm summers. These alternate, making viticulture challenging. The soil is rocky, mixed with sand and limestone. This makes the soil not very fertile, but it does retain sufficient moisture. The other Malbec grapes come from the Altamira vineyard, at an altitude of 1200 meters above sea level. Here, cold nights alternate with warm days. The soil is very fertile, with limestone, sand, and stones.
When the grapes are fully ripe, they are harvested by hand in March and April. In the winery, a preferential maceration process follows for seven days. Fermentation also takes place for seven days in concrete tanks with indigenous yeasts. This is followed by malolactic fermentation, also in concrete tanks. Finally, the wine is aged in French oak barrels for 12 months. The wine is then bottled and matured for a further six months in the bottle before release.
