A unique maturation on oak
This Champagne takes nearly twenty years to make. It consists of 120 different reserve wines, the oldest of which is ten years old. These reserve wines are carefully blended after a short pressing, using only the finest grapes. Harvesting is also entirely by hand, ensuring strict selection of the grapes before pressing. All wines ferment in oak barrels, a unique process in the Champagne world. Normally, oak is rarely used in Champagne production to preserve its freshness. Once the final blend of 120 different reserve wines has been created, the bottles are cellared for at least six years to mature and develop the mousse.
