La Chablisienne is the flagship winery for Chablis and the surrounding area. The quality is exceptionally high, and the most common grape variety used is Chardonnay. This Chablis Le Finage is also made entirely from this grape. The winery was even named the best cellar cooperative in France in 1996!
The high quality of La Chablisienne
La Chablisienne Winery was founded in 1923 by approximately 180 small winegrowers from Chablis. They joined forces in response to the poor economic conditions of the time. Twenty years later, the winery expanded through a merger with another Chablis cooperative. It is now a winery with 300 members and a total of 1,130 hectares of vineyards, including 30 premier cru and 6 grand cru vineyards. The quality of the wines is consistently high. The Chablis region is known for its dry white wines made from Chardonnay. This Chablis le Finage is no exception. It is fresh and elegant. The Chablis region is the northernmost of Burgundy and borders the Champagne region quite closely. The soil consists of a unique limestone, formed from fossils and shellfish. This gives the wines a mineral, almost saline character.
The grapes are harvested with the utmost care at peak ripeness. Afterward, they are meticulously selected, with only the very best remaining. This is followed by a cold maceration process of several hours, followed by fermentation, alcoholic fermentation, and malolactic fermentation in barrels. Finally, the wine is aged for 12 months on its fine lees in oak barrels.
A refined Chardonnay with complexity
The result is a white-gold wine that is exceptionally clear and sparkles beautifully in the glass. Its complex aromas are immediately revealed, with notes of roasted almonds, hawthorn, acacia, apricot, and even a hint of hay. A refined wine with complexity and refinement. The acidity is exquisite, and the finish is wonderfully long.
