In the middle of the night, while the sun is still setting, they are brought in in small crates. After a short journey behind a tractor, they arrive at M. Chapoutier, where they are placed on sorting tables to select only the finest bunches for the wine. Only the best is good enough for this red La Ciboise. The entire wine is fermented and regularly stirred to preserve its freshness and fruitiness. After this period, it is aged in its entirety for six months in oak barrels, allowing it to mature.
