Today, the vineyard is mature and produces full, robust bunches. These are harvested mechanically at night at perfect ripeness to prevent oxidation and preserve the natural freshness of the grapes. Once brought in, they are laid out on sorting tables and thoroughly inspected. Only the finest Chardonnay bunches are used in this white wine. But before this, the entire wine is aged for a full three months on the yeast cells, making it fuller and more powerful.
