Les Bories knows better than anyone how to craft a magnificent, full-bodied rosé from the Syrah grape. The beautiful vineyards for this rosé are located in the south of France, in the Vin de Pays d'Oc region. With warm summers and abundant sunshine, the Syrah grapes thrive. The winemaker has done a remarkable job of planting the vineyard higher up on the hills. This higher elevation allows the grapes to enjoy plenty of sunshine but also cool nights, as temperatures can drop as low as 18 degrees Celsius on the hillside. This freshness allows the winemaker of Les Bories to create a lovely, light, and refreshing rosé comparable to a Côtes de Provence rosé.

The old Syrah vineyard of Les Bories

At the ideal ripeness of the grapes, harvesting begins manually in the early morning. This is done early to prevent bruising and damage to the bunches. The grapes also retain their freshness, which translates into their excellent flavor. All bunches are carefully inspected on sorting tables, and any unusable bunches are removed. The pure juice remains, and the skins ferment for only 15 minutes to achieve the beautiful light pink color.
