Delaunay is the co-founder of the Les Jamelles winery and, with her knowledge and expertise, knows how to bring a beautifully balanced Pinot Noir to the market.
Quality wines from Les Jamelles
Les Jamelles has 400 hectares of vines planted with various grape varieties. The character of each grape variety is central, and the success of the wines is partly due to the diverse terroirs. The winemakers of Les Jamelles have access to various vineyards, allowing their wines to combine many beautiful qualities. For example, the grapes for this red wine come from four terroirs. The grapes from the vineyards of the Herault Valley and the foothills of the Pyrenees add richness to the bottle. Conversely, the vineyards in the Haute-Aude Valley contribute to the freshness and fruitiness. The vines in the Aude River Plain give the wine length and structure.
The grapes are carefully selected to ensure the highest quality. A cold pre-fermentation maceration lasts about a week. Fermentation then takes place at controlled temperatures for 8 to 10 days. Finally, the wine is aged for 6 to 9 months in lightly toasted oak. This gives the final wine a lovely, slightly woody character.
