Vineyards and region
The Monastrell grapes come from the sun-drenched vineyards of Jumilla. Thanks to the dry climate and chalky soils, Monastrell ripens perfectly here, with great concentration and juiciness. This ripeness is crucial for alcohol-free red wine, as the fruity character must be robust enough to remain intact without alcohol.
Vinification and maturation
The grapes are destemmed and fermented as for a classic red wine, with temperature control and a short maceration to preserve color and aroma. After complete fermentation, the wine is dealcoholized through a careful process that preserves the essence of Monastrell. The wine therefore contains 0% alcohol, yet retains the full character of a true wine.
