Once the grapes have reached their full ripeness after a long ripening period and still retain sufficient acidity, they are harvested. In the middle of the night, while the sun is still setting, they are brought in in small crates. After a short journey behind a tractor, they arrive at M. Chapoutier, where they are placed on sorting tables to select only the finest bunches for the wine. Only the best is good enough for this red La Ciboise. The entire wine is fermented and regularly stirred to preserve its freshness and fruitiness. After this period, it is aged in its entirety for six months in oak barrels, allowing it to mature. The result is stunning, and at this price point, Michel Chapoutier knows how to attract many restaurants with this wine. It is frequently served in many top restaurants.
As soon as we open the bottle, we smell Michel Chapoutier's beautiful style. The aroma reveals complex notes of blueberries and black currants complemented by spicy nuances. The palate of this La Ciboise is smooth, with beautiful flavors of ripe black fruit and a spicy note of nutmeg and pepper. The finish is full and creamy.
