The challenging conditions for Maggy Hawk Skycrest Chardonnay

Grown at approximately 650 meters above sea level, Maggy Hawk's Chardonnay grapes face a challenging task. They must navigate poor, weathered sandstone soil. But these challenges result in a wine with an intensity and complexity found nowhere else. Thanks to the cool ocean breeze and the dramatic temperature differences between day and night, the grapes retain their freshness while ripening slowly and evenly. These natural conditions create the foundation for a Chardonnay that captivates your senses with its refined aromas and flavors. After being carefully harvested by hand, the grapes are first gently crushed by foot and then gently pressed. Fermentation then begins in a mix of new and used wooden barrels, using natural yeasts. This approach, combined with natural malolactic fermentation, allows the wine to evolve slowly and steadily, gradually revealing its subtle complexity and depth. The wine then matures for 15 months in barrels, 20% of which are new, to achieve a perfect balance between the fruit, the characteristics of the vineyard, and the influences of the oak.
