The biodynamic viticulture of Maris
Robert Eden emigrated from England to France over 20 years ago with the dream of making truly terroir-driven wines. He firmly believes that wines should be "grown" rather than "made," and to that end, Château Maris practices both organic and biodynamic viticulture. Maris has built the world's only wine cellar from hemp bricks, an environmentally friendly structure that is completely biodegradable. Now they cultivate a 79-hectare estate divided into numerous small vineyards on the hillside above the village of La Livinière, the first Cru Classé of the Minervois.
A blend of 70 percent Merlot and 30 percent Syrah grapes. The grapes are harvested at peak ripeness and taken directly to the winery. Here, the grapes are first macerated for three weeks at 28 degrees Celsius in concrete vats. This is followed by fermentation at a controlled temperature of 28 degrees Celsius. Finally, the wine is aged for four to five months in concrete vats.
