Sustainable agriculture by Maris

Winemaker Robert Eden is responsible for Château Maris's finest wines. He has lived in France since the 1990s, having worked with experienced winemakers around the world. The château is nestled in the high-altitude vineyards of the Minervois region and was founded in 1997. From the very beginning, the estate has been biodynamic, making Maris a pioneer in sustainable agriculture. The wine cellar uses no energy and is even constructed of natural materials that maintain a stable temperature. These natural conditions are ideal, as the vines, some of which are nearly 100 years old, grow on the gentle slopes of the Cévennes foothills and benefit from the vineyards' southerly orientation. They enjoy the sun and are protected from the cold north winds. Maris owns a vineyard of nearly 45 hectares, the finest parcels of La Livinière in the heart of the Minervois region. The grapes are harvested here at peak ripeness. They are pressed directly at the winery without sulfur. Fermentation follows. This takes place at low temperatures, after which the wine ages on the lees. This gives the Casse Croute white wine a wonderfully smooth character.

The white Casse Croute from Château Maris is a fruity and delicate wine. As soon as you pour it, you can immediately enjoy a very floral aroma, complemented by notes of yellow fruit and a hint of vanilla. On the palate, this white wine is perfectly balanced. We taste ripe fruit, with apple as the dominant note. The flavors and aromas linger and continue into a mineral and lively finish.
