6 months of wood aging for Masseria Li Veli Orion Salento Primitivo
In 1999, the Falvo family purchased a 128-hectare estate in the Salice Salentino area, the heart of the Salento region. With this purchase, they revived the historic intention of Antonio de Viti de Marco. At the beginning of the twentieth century, this renowned Italian economist envisioned transforming the estate into a model winery for all of southern Italy. They focused on the most important indigenous grape varieties, such as Negroamaro, Primitivo, and Aleatico. Their vision was to reflect the quality of this region in their range. And thanks to their passion and well-tended vines, they produce wines in perfect harmony with the land.
The Primitivo grapes are harvested entirely by hand and transported to the winery in small crates. This ensures the best possible preservation of all the grape's characteristics. A second manual selection follows, ensuring only the highest-quality grapes are then destemmed and crushed. Fermentation takes place at a controlled temperature between 17 and 31 degrees Celsius. This step is carried out with great precision, including delestage. This involves draining the juice from the tank, causing a grape cake to break down at the bottom. The juice is then poured back over the cake, allowing maximum color and flavor to be extracted from the skins. Finally, the wine is transferred to oak barrels for aging for six months.
