Organically grown Sauvignon Blanc
With five generations of winemakers behind them, the Sanz brothers have been enjoying their own project, Menade, since 2005. With a clear commitment to returning to their origins and the vineyard, they have made all their wines organically from the start. You won't even find copper in the vineyards. The vineyard boasts vines over 120 years old, and they are also experimenting with new organic viticulture techniques.
Menade's Sauvignon Blanc is made from organically grown Sauvignon Blanc grapes grown at an altitude of 700 meters in clay and limestone soils. The grapes are harvested at night to prevent oxidation and preserve as much fruit and freshness as possible. Upon arrival at the vineyard, the grapes ferment in stainless steel tanks at 18 to 22 degrees Celsius, using only natural yeast. Fermentation is stopped by cooling the must when the residual sugar reaches approximately 60-80 grams per liter. After approximately four weeks of storage in tanks from its precipitate, the wine is clarified with bentonite, cold-stabilized, and bottled.
