The Blauburgunder grapes are carefully harvested and taken directly to the winery. Here, they first undergo a five-day cold maceration. During this phase, the grapes are macerated at low temperatures to optimally extract their aromas and color. After maceration, the grapes undergo controlled alcoholic fermentation, during which the grape must is fermented into wine. During this process, the mash is regularly stirred to promote optimal extraction of flavors and aromas. This phase lasts approximately 12 days. The wine is then transferred to tonneaux, which use both new and used barrels. Aging in these barrels further develops and matures the wine, refining its character and flavor profile.
