Wood aging for the Mercury Head Cabernet
After being hand-harvested, this red wine is aged for an impressive 18 months in oak barrels in Orin Swift's cellars. About half of the barrels are new and unused, giving it its full character. The aroma reveals notes of cassis, blueberries, and black cherry, complemented by hints of lavender, plum, and sandalwood. The palate is very powerful with fine, soft tannins, abundant black fruit, dark toffee, and espresso bean, as well as spices and cedar. The back of the palate reveals even more flavors of soft rhubarb and licorice. What a superb wine, never to be forgotten.
