This beautiful winery is located between the Aude and the Hérault. The founder of the winery, J. Pascaline, wanted to limit himself to producing two wines: a red and a white. With this in mind, he wanted to create delicious wines for everyday use while still giving his full attention to the vineyards. And he succeeded!
A silky smooth Merlot
The vineyards for this Pascaline Merlot Cuvée have an average age of 20 years. This allows the plants to be deeply rooted in the rich soil and draw sufficient nutrients and moisture from it. The Merlot vines are planted on two south-facing slopes. This orientation allows the grapes to receive sufficient warmth from the glorious sun, while the altitude provides a pleasant coolness in the evening and night. A perfect balance for producing a smooth Merlot wine. When the Merlot grapes for this red wine are perfectly ripe, the harvest begins early in the morning. This is done entirely mechanically. Once they arrive at the press, the grapes are carefully sorted on sorting tables to ensure only the finest grapes are pressed.

The result after all the effort in the vineyards? An exceptionally smooth red wine with plenty of character. Upon pouring, we immediately notice a beautiful ruby-red color with a purple sheen in the center. The aroma reveals a pleasant bouquet of red fruit aromas like cherries, raspberries, and berries. This translates into a ripe and smooth red wine on the palate, with the nuances of the red fruit pleasantly emerging. The silky finish completes this Pascaline red wine!
