Vineyards and region
The grapes come from Spain, from Castilla La Mancha, from organic vineyards in the province of Cuenca. The Cabernet Sauvignon vines are about 10 years old and have adapted well to these conditions. The dry, sunny climate produces ripe grapes with abundant color and flavor, while the cooler nights preserve sufficient freshness in the wine.
Vinification and maturation
The grapes for Punctum Nortesur Cabernet Sauvignon are harvested at night to ensure the fruit arrives cool in the cellar and better preserves its aromas. In the glass, this wine is ruby red in color. The aroma is reminiscent of berries and cherries with a hint of spice in the background. The palate is full-bodied with abundant ripe black fruit such as blackcurrants, plums, and cherries, complemented by subtle notes of spice and tobacco that add depth. The soft and rounded tannins make the wine easy to drink while still providing enough backbone to pair with food. Serve Punctum Nortesur Cabernet Sauvignon around 16°C (60°F).
