OddBird Blanc de Blancs is no ordinary alcohol-free sparkling wine. This French sparkling wine is made primarily from Chardonnay and is vinified entirely according to traditional methods, after which the alcohol is carefully removed. The result? A characterful, gastronomic wine with finesse, elegance, and depth – without compromising on flavor.
Vineyards and region
The grapes come from the Languedoc, where chalky soils and the cooling influences of the Mediterranean Sea create fresh acidity and vibrant aromas. The plots are deliberately harvested early to capture the natural freshness of Chardonnay, essential for the style OddBird strives for: dry, lively, and free of residual sugar.
Vinification and maturation
OddBird Blanc de Blancs is first fully fermented and aged like a traditional Crémant. Only then is dealcoholization carried out using an advanced vacuum-sealed method at a low temperature. This preserves the delicate aromas and texture. The wine is bottled with light carbonation to create the refined mousse so characteristic of this cuvée.

Tasting notes and serving suggestions
This Blanc de Blancs is pale golden yellow with a fine, persistent bubble. The nose reveals lime blossom, green apple, almond, and wet stone. The palate is taut and mineral, with a precise acidity and a long, dry finish. Serve chilled at 6. ℃ to 8℃ as an alternative to Champagne with oysters, ceviche or a salad with fennel, apple and walnut.
