The origin, grapes and craftsmanship behind this wine.

In search of a perfect wine made from the Pinot Grigio grape, we begin our journey on the beautiful island of Sicily. This rugged island is the largest in the Mediterranean. Approximately 5 million Sicilians live in an area slightly smaller than Belgium. For a large portion of them, winemaking is vital. While viticulture in general has a centuries-old history, it was less than inspiring until the 1980s. From then on, many wineries began to focus on the quality of their wines, rather than the quantity. For several years now, Sicily's wines have been considered among the finest in all of Italy.

This Oynos is based on the indigenous Pinot Grigio. This grape has made waves in northern Italy, particularly in the Veneto province, where it is widely planted. Meanwhile, this indigenous grape is gaining ground in the rest of Italy, including in the vineyards of Sicily. Unique to this Oynos Pinot Grigio is that the white wine is entirely organically produced. This means no pesticides or synthetic fertilizers are used during the production process.

The incredible purity of Oynos Pinot Grigio is also attributable to its organic production methods. No enzymes or extra yeast are added, enhancing its purity and creating perhaps Sicily's most sensational Pinot Grigio. The nose primarily reveals the freshness of apple, pear, and citrus. The palate is fresh, fruity, and minerally. Broad notes of peach, apple, and fennel gently envelop your taste buds. The pleasant aroma and flavor of Oynos Pinot Grigio pair perfectly with fish, shellfish, and light pasta dishes.
