The traditional wines of Paniza

Paniza Winery has a rich history in the Cariñena region and has established itself as a leading producer of traditional, high-quality wines. The winery is located in northeastern Spain, in the region named after the Carignan grape. Paniza currently has approximately 1,400 hectares of vineyards, spread across no fewer than 450 different vineyards. This creates a wide diversity of grape varieties and terroirs, allowing for wines with diverse flavors and styles. The terroir in this region is unique, with sandy and clay soils and protection from cold northerly winds provided by the surrounding mountains. The Paniza Garnacha Tempranillo winemaking process begins with crushing and destemming the grapes, followed by six days of maceration. The grapes are then fermented in stainless steel tanks at controlled temperatures, with daily pumping to optimally extract the color, flavor, and aromas. After fermentation, the wine is decanted and undergoes malolactic fermentation. Finally, the wine is filtered before bottling. This careful process creates the distinctive flavor and quality of Paniza Garnacha Tempranillo.
