Each bunch is meticulously examined, as only the very best are ultimately used. This makes the red Papale wine one of the finest in the region. Unfortunately, the wine cannot be produced every year; Cosimo Varvaglione produces it only in exceptional years. Once the Primitivo grapes are pressed, the Papale juice is aged in oak barrels for at least ten months. During this period, it matures fully and develops its full and very powerful aroma and flavor.
